Quick Easy Dinner 2
After the great responses from you on my first blog post for a quick easy dinner, I thought I'd share another of my quick easy dinner ideas and this one will also save you some money.
I grew up camping so it was easy for me to marry a guy who also loves camping and getting off the beaten track.
One thing you learn when camping is that you need quick easy dinners that are easy on the pocket and that will last in the esky.
One camping trip around 6 years ago, I stretched our sausages into two meals. After a night enjoying sausages and veges, the next night the leftover cooked sausages were cut up, fried lightly and formed the start of what is now known in our house as sausage pasta.
Turns out my husband enjoyed this slap dash sausage pasta dinner that whenever we have sausages for dinner now, he asks me to make sure to leave enough for sausage pasta tomorrow night.
This is a great way to turn one nights meat portion into two dinners saving you some money on your grocery bill. It works with most meats, saves you money and is an easy way to introduce more veges into your diet.
So I load up extra veges for the first nights meal which are cheaper and healthier.
Then on night two, the leftover meat is cooked up, I add whatever vegies I have that will work with pasta, some tofu if I have it and add pasta sauce, either shop bought or homemade depending on whats in the freezer or esky. Cook up some pasta and alas, a yummy cheap easy dinner is on the table.
This is a great way to stretch your dinner ideas into two meals by adding more veges, pasta or other non meat and often cheaper alternatives to your menu.
I am still surprised that an idea to stretch out what was left in the esky more than 6 years ago is now a regular dinner request. The good thing is the pasta night dish changes every time I cook it depending on what is available. Maybe thats the secret, no two meat pasta dishes are the same in this house.
So we have reduced our grocery bill and increased our vege intake all by request.
